Signature Recipes

Saudi Kabsa — the classic method
Sauté onion, garlic and kabsa spices; brown the chicken; add tomato and stock. Add soaked SAFIA 1121 Golden Sella 1:2 with stock, simmer covered 18 minutes, rest 10. Finish with fried nuts and raisins.
Mandi — smoke & steam
Season meat with mandi spice; slow-roast until tender. Cook soaked SAFIA 1121 Steam 1:1.5 in the strained meat stock 12 minutes; smoke with a charcoal ember and ghee for 5 minutes before serving.
Biryani — layered perfection
Par-boil soaked Super Kernel Basmati to 70%; layer over marinated meat masala with saffron milk and fried onion; seal and dum on low heat 20 minutes.
Perfect plain steam rice
Rinse SAFIA 1121 Steam until water runs clear; soak 30 minutes; cook 1:1.5 water with a pinch of salt, 12 minutes covered; rest 5 minutes; fluff with a fork.
